Regarding the INSTRUCTIONS ARE 3 YEARS OLD... Are you saying that IF we are using MobileMenuCK, we no longer have to
a. replace Maximenu CK, nor...
b. remove it?

Mobile Menu CK is a plugin, you can

use Mobile Menu CK instead
disable the plugin Maximenu CK Mobile
if everything works as expected, then you can (must) totally remove it
