It might be easier if I just explain what I'm trying to duplicate. I want the menu to look like this (without the arrows, I understand how to remove the arrows)

I would suggest you to use the "blank" theme, this is the base without styling
Then you can add the needed styles using the interface. it's the best way to do what you want

Is there a way to remove the line between each submenu item? So the entire sub menu has an outline around it (left,bottom and right)?

Also, nothing I do seems to change the height of the submenu items (in the horizontal menu).

Hi
for the border, it's defined in the styling interface. You should be able to update it from the module >> style >> edit
or may be due to the theme >> select "blank" as theme
for the height, try to use some padding

Ok. I got the padding to work but no luck with the line.
I just want the middle line gone, in between each menu item. I really do try this stuff before I contact you. I know it I can be annoying.

where do you add the borders ? on the menu items ? you must remove it
just add the border in the "submenu" area so that there will be no border in the items
