Problem with text colors

I am having a problem with text colors. When I am using the default ( other themes don't work well with site) any menu header added is very dark gray over black. I could not find any way to fix this other than a laborious process of digging through files to edit the css. It is not a simple CSS because it is buried inside a .php fle. But then if I allow an update it wipes out my work and menu again becomes unreadable.

It is taking color from template so if I permit that and change that to white all the text on pages are then invisible.

How can I adjust font colors in menu without it being wiped out on every update?

Please outline the specific files that need to be edited that are not overwritten on update.

Hi
instead of using "header" for your menu items, please try to use "separator". This one will take the same styles as the other items
The "header" shall be used as column title in the submenu for example, and you can style it in the interface
