I know, but this web site is open, and I'm afraid to update it with the packages update process (by upgrading from Joomla X.X package, to Joomla X.X package), without making a new installation.

try to find some help on the forum.joomla.org forum,
you can make your tests on a copy of your website then just change the target folder of your domain to the new one
