LImit the menu's submenu items

Hello,
I want to customize the plugin to show, Only 2 submenu's per menu and append a read more link per menu.

Is this possible, I've attempted but was not possible..

this would be possible by creating a specific menu with alias items and add the readmore link into a custom module loaded in the menu
